This
is a great dish for kids who love greens - and it's not bad for
those who don't, either! It's visually appealing, quick and easy.
Local fava beans (broad beans) and peas should be available soon -
they are lovely on their own, but when you're bored of them just
plain, try this out.
1/2 small onion, diced
2 tbsp olive oil
1/2 cup white wine
1 cup blanched & peeled fava beans OR fresh shelled peas
2/3 cup heavy cream
large handful of arugula, spinach or other tender leafy green,
blanched (approx 1-2 oz uncooked weight)
6-7 large leaves basil
1/2 cup or so grated parmesan
1 clove garlic
1/2 tbsp lemon juice
salt and pepper to taste
Clean and remove any stems from the greens. Sauté the onion in the
olive oil. Just before it starts to brown, add the wine. Add the
fava beans or peas and cook until soft. Add the cream before
the wine is entirely cooked off. Add greens, parmesan, basil and
garlic & cook very briefly.
Throw everything in the blender & blend until smooth. Adjust
seasoning if necessary. Toss with cooked hot pasta, preferably fun
stuff like spiralled long fusili (available at Ambrosio Markets).
